The restaurant is the latest project from Trigo Restaurant Group, the local hospitality team already responsible for two of the township’s established favorites, La Colina Mexican Cantina and Lukas Seafood and Grille, and it marks a deliberate step into a more refined, fire centered culinary lane than either of the group’s existing concepts.

The concept’s name is not just branding. At the center of the open kitchen sits a wood fired brick oven running at roughly 900 degrees, visible from most of the dining room and serving as the literal and figurative heart of the restaurant. That open, energetic setup, paired with a bar forward layout near the entrance, has given Troy’s Firehouse and Bar a reputation among early guests for a space that reads as modern, clean, and elegant without losing the warmth needed to work equally well for a romantic date night or a full family celebration.

The restaurant’s own materials describe the guiding idea plainly, that every dish should carry the same sense of fire and passion the name promises, with the brick oven’s extreme heat delivering the specific crisp and char that lower temperature cooking simply cannot replicate.
