Hang With Alpacas and Breathe in the Bloom at Hidden Spring Lavender Farm

Tucked away in the heart of Skillman, New Jersey, just a short drive from bustling city life, you’ll find a magical oasis that smells like serenity and feels like a warm hug. Hidden Spring Lavender Farm is more than just a destination—it’s an immersive experience that blends rustic charm with natural beauty, animal companionship, and locally crafted products.

What started 25 years ago as a hay field and a dream has blossomed into a 25-acre lavender wonderland complete with a growing herd of friendly alpacas, picturesque purple fields, and a cozy, fragrant-filled farm shop that leaves visitors smiling and refreshed.

The Dream That Bloomed Into Reality

Marie and Steve Voorhees weren’t always lavender farmers. Their original land—complete with a classic red barn—was a working hay farm with cattle. But off-season aesthetics and a desire to create something more visually appealing (and deer-resistant) led them to take a chance on lavender back in 2012. What began with 1,000 plants has grown into more than 5,000 thriving lavender bushes spanning 15 varieties, offering a vivid sea of purple every June and July.

Lavender’s natural calming properties make it a go-to in aromatherapy, but at Hidden Spring, it’s also the star of everything from essential oils and linen sprays to handmade soaps, candles, and even lavender-stuffed teddy bears. The repurposed barn now serves as a full-service lavender boutique, with every product lovingly crafted onsite.

Meet the Real Stars: The Alpacas

If lavender is the heart of Hidden Spring, the alpacas are the soul. After boarding horses became too labor-intensive, the Voorheeses introduced alpacas in 2018—and they’ve been a hit ever since. Starting with just four, the farm now boasts 22 cuddly alpacas, each with its own personality and story.

Visitors can stroll the grounds on alpaca walks, interact with the gentle animals up close, and even catch them dressed up in seasonal costumes during the holidays. Their presence is more than adorable—they’re therapeutic, especially for first-time visitors and families from urban areas.

“They just put a smile on your face,” says Marie. “Watching someone pet an alpaca for the first time or walk through the lavender fields—it’s just pure joy.”

The alpacas don’t just look good either. Many of them are award-winners, bred for top-tier fleece that’s spun into luxurious, warm items like blankets, yarn, scarves, and socks—all available in the farm’s shop.

Sustainable Farming With a Personal Touch

Running a farm of this nature isn’t all sunshine and blossoms. The Voorheeses have weathered everything from shifting state regulations to the impact of the pandemic. When COVID disrupted foot traffic, Marie shifted gears and created thousands of lavender-scented face masks, keeping the farm’s mission alive through innovation.

This ability to adapt is what keeps Hidden Spring fresh. The farm has evolved from hosting weddings and events to focusing more on its core mission: creating a peaceful, educational, and joyful experience for all who visit.

Despite rising costs and economic shifts, Marie and Steve have maintained affordable pricing for over a decade. Entry is free on non-event days, and no reservation is needed—an open invitation to escape into nature.

Spring Sports Wrap-Up: A Season to Remember as Allison Lee’s Silver Medal Moment Caps Off a Thrilling Season for Garden State High School Sports

As the spring season of New Jersey high school sports wraps up, the track at Pennsauken High School bore witness to a defining moment for one of the state’s rising stars in distance running. Allison Lee, a junior at West Windsor-Plainsboro North, proved she belongs among New Jersey’s elite with a stunning second-place finish in the 3200-meter run at the NJSIAA Meet of Champions—a feat that not only earned her a silver medal, but also cemented her status as one of the toughest competitors in the state.

👉 Explore more New Jersey high school sports moments here

From Missing the Cut to Medaling on the Big Stage

Last year, Lee missed out on the Meet of Champions, which left her with something to prove heading into this season. And prove it she did.

On a scorching Wednesday afternoon with temperatures testing every athlete’s stamina, Lee delivered a gutsy performance that showed not just her physical ability, but her mental toughness. Clocking in at 10:31.91, she finished just a few seconds behind Ocean Township’s standout freshman Leah Starkey, who crossed the line at 10:28.18.

“I’m really happy with the choices I made in this race,” Lee said post-race. “There were a lot of points where I had to mentally dig in. I’m just glad I stayed in it and kicked hard on that last lap.”

Her strategy? Patience, poise, and positioning. Lee trailed closely behind Starkey for much of the race, hanging on through every lap until Starkey pulled away over the final 1600 meters. Even though she couldn’t close the gap, Lee’s silver-medal run marked a huge personal and athletic victory.

A Champion’s Mentality

Lee didn’t just run a fast time—she ran with intention. The CVC champion in both the 1600 and 3200-meter races this season, she’s become known not only for her speed, but for her drive. And even in the face of stiff competition, she took the high road, showing tremendous respect for Starkey:

“I respect her so much,” said Lee. “She took the race out hard and wasn’t afraid to lead. That pushed me, and this race wouldn’t have been what it was without her.”

Lee’s coach, Brian Gould, echoed that sentiment. “She’s worked so hard for so long. This is a great finish to a great season and a great school year. I just hope she takes a moment to enjoy what she’s accomplished before setting her sights on next year.”

And that’s exactly what she’s planning to do—before getting back to work, of course.

“It’s great to have races like this under your belt. They give you momentum,” Lee said. “I’m excited to take this experience and head into cross country with ambitious goals.”

Track and Field Highlights: More Garden State Glory

Lee’s performance was just one part of a thrilling day at the NJSIAA Meet of Champions, which saw:

  • Record-breaking performances in the 1600 meters, where a phenom shattered a state record.
  • Big wins from top-tier athletes like Keating and Shue, who dominated in their respective events.
  • Heartfelt stories of perseverance and comebacks across the track and field program.

From the sprints to the pole vault, New Jersey athletes continue to prove they are among the most talented and resilient in the country.

Spring Sports Wrap-Up: A Season to Remember

While track may have taken center stage at Pennsauken, the entire spring sports calendar in New Jersey delivered drama, milestones, and unforgettable moments:

⚾ Baseball

The sectional championships featured thrilling matchups with powerhouses like Westfield and Bridgewater-Raritan advancing deep into the tournament.

🥎 Softball

Stars shined on the diamond with teams like Indian Hills, South Brunswick, and Woodbridge chasing championship dreams. Meanwhile, Gabby Shadek of IHA broke the all-time state home run record, setting a new standard for excellence.

⛳ Golf

North Jersey’s best were honored as the All-Bergen and All-Passaic County teams were announced, along with final statewide rankings.

🥍 Lacrosse

Sectional quarterfinals wrapped up with explosive performances from top players and teams, setting the stage for fierce semifinal matchups.

🎓 Honors and Awards

New Jersey also celebrated academic excellence with the NJSIAA Scholar Athlete Awards, while Rutherford High School earned Level 1 status on the NFHS School Honor Roll, showcasing the balance between athletics and academics.

A Winning State: New Jersey’s Education System Sets the Bar

Beyond sports, it’s been a banner year for New Jersey as a whole. The state was recently named the top-ranked in the nation for education by U.S. News & World Report. This recognition is built on:

  • Leading the nation in preschool enrollment
  • Exceptional SAT and ACT performance
  • Strong support for teachers and investment in learning
  • A commitment to challenging students academically at every level

With a culture that supports both athletic achievement and academic excellence, it’s no wonder New Jersey continues to lead the way.

Looking Ahead: The Future is Bright for Allison Lee and NJ Athletics

With one year left in her high school career, Allison Lee is just getting started. Her silver-medal performance at the Meet of Champions isn’t just a result—it’s a launchpad.

Hudson House in Jersey City: A Landmark Project Enters Its Next Chapter

In a major milestone for Jersey City’s skyline, the Hudson House development—a sprawling project that combines modern design with historic preservation—has officially been sold as construction concludes.

What makes this project unique? The development includes an adaptive reuse of the iconic Emerson Radio Factory, a longtime industrial anchor in the area, along with three new high-rise towers that add luxury residences and retail to the vibrant city core.

Hudson House isn’t just about aesthetics—it’s about strategic city planning. No Crash Ahead: 2025 Home Prices to See Modest Gains

Across the U.S.—and especially here in New Jersey—many homeowners and potential buyers have been holding their breath, waiting to see whether housing prices would fall sharply. But according to leading economists, that dramatic drop isn’t coming.

In fact, home prices are projected to increase by 3% in 2025, thanks to a combination of limited housing supply, low mortgage delinquency rates, and continued job growth.

Despite a rocky start to the year and reports of increased seller price cuts, the fundamentals of the market remain strong. Here’s why:

  • Inventory remains tight. New construction has not yet caught up with demand, particularly in urban-suburban crossover areas like northern New Jersey and parts of Central Jersey.
  • Delinquencies are low. Most homeowners are not in distress, reducing the risk of foreclosures flooding the market and depressing prices.
  • Mortgage rates are expected to ease. Forecasts suggest rates could dip to around 6.4% by the end of the year, which would breathe new life into buyer activity.

Home sales are expected to rise, too, with existing-home transactions predicted to grow by 6% and new-home sales jumping by 10%. That means more movement, more listings, and more opportunities—whether you’re buying, selling, or investing.

What This Means for New Jersey Homebuyers and Sellers

For homebuyers, especially first-timers, the second half of 2025 may offer a more manageable entry point. If mortgage rates ease as projected, buying power will increase—allowing more flexibility even as prices rise modestly.

For sellers, the message is clear: now is a strong time to list, especially in high-demand areas like Bergen, Hudson, Union, and Monmouth counties. While bidding wars may not be as fierce as they were in early 2022, solid offers and quick closes remain very achievable—particularly for homes that are well-priced and move-in ready.

For investors and developers, projects like Hudson House demonstrate that adaptive reuse and mixed-use developments remain attractive, especially in commuter-friendly markets with room for upscale housing and lifestyle amenities.

Final Thoughts: A Balanced Market with Room to Grow

While the national housing market is always subject to global and macroeconomic factors, New Jersey’s local dynamics are grounded in long-term stability, economic growth, and geographic appeal. The state’s proximity to New York City, strong public transit, and diverse housing stock make it one of the most sought-after places to live in the Northeast.

So whether you’re following the sale of a landmark development like Hudson House or tracking broader pricing trends, one thing is clear: the Garden State’s real estate future looks far more stable than stormy.

Explore New Jersey Politics Today. Turnpike Authority Decision. Gubernatorial Candidates Respond. Mikie Sherrill. Booker vs. Cruz. ICE Operations Across NJ

As New Jersey approaches its 2025 gubernatorial election, the political landscape is charged with urgency and transformation. Voters are grappling with rising costs, shifting political dynamics, and a reevaluation of leadership. In this detailed analysis, we delve into the key issues and figures shaping the state’s political future.

Affordability at the Forefront: Gubernatorial Candidates Propose Solutions

With the June 10 primary fast approaching, affordability has emerged as the central theme in the gubernatorial race. Voters across New Jersey are expressing concerns over escalating property taxes, housing costs, and energy expenses. Candidates are responding with a variety of proposals aimed at alleviating these financial pressures.

Democratic Candidates:

  • Mikie Sherrill has outlined a comprehensive plan to address affordability, focusing on expanding affordable housing, reforming the tax credit system, and increasing funding for the Affordable Housing Trust Fund. Her approach emphasizes regional coordination and modernizing the state’s affordable housing infrastructure.en.wikipedia.org
  • Steven Fulop, Mayor of Jersey City, has proposed a statewide transportation agenda that includes expanding NJ Transit services, introducing congestion pricing similar to Manhattan’s model, and enhancing the PATH system’s integration with NJ Transit. He also advocates for reducing in-person transactions at the Motor Vehicle Commission to streamline services. en.wikipedia.org

Republican Candidates:

  • Jack Ciattarelli, a former state assemblyman, has pledged to reverse policies he deems restrictive, such as sanctuary state measures, and to reduce taxes by 2% annually through waste elimination. He has secured an endorsement from former President Donald Trump, who praised him as a “true champion” capable of shifting the state from Democratic to Republican control.
  • Mario Kranjac, the mayor of a Democrat-leaning town, has positioned himself as a political outsider. Endorsed by Newt Gingrich, he advocates for tax cuts, term limits, and a focus on education reform. His platform emphasizes reducing government waste and opposing federal overreach.

As the election nears, the debate over affordability continues to dominate, with each candidate presenting distinct visions for the state’s economic future.

Mikie Sherrill: Redefining the ‘Establishment’ Narrative

Congresswoman Mikie Sherrill’s bid for governor has sparked discussions about the evolving nature of political establishment in New Jersey. Critics label her as the “establishment” candidate, but her career trajectory suggests a more nuanced position.

Sherrill first entered politics by flipping New Jersey’s 11th Congressional District from Republican to Democratic control, defeating a long-standing incumbent. Her background as a Navy veteran and federal prosecutor resonated with voters seeking a departure from traditional political figures.

While she has garnered support from established Democratic leaders like LeRoy Jones and Kevin McCabe, Sherrill’s approach emphasizes collaboration and reform. She advocates for modernizing the state’s affordable housing system, enhancing transportation infrastructure, and ensuring environmental protections.

Her campaign reflects a blend of experience and a commitment to progressive change, challenging the conventional definitions of political establishment.

Legal Precedent: NJ Supreme Court Upholds Turnpike Authority’s Bid Rejection

In a significant legal development, the New Jersey Supreme Court upheld the New Jersey Turnpike Authority’s (NJTA) decision to reject a bid from El Sol Contracting for a bridge redecking project. The court ruled that the rejection was not arbitrary or unreasonable, affirming the NJTA’s authority in procurement decisions. law.justia.com

This ruling underscores the importance of adherence to procedural requirements in public contracting and may influence future bid disputes.cohenseglias.com

National Spotlight: Booker and Cruz Clash Over Immigration Policies

Senators Cory Booker and Ted Cruz engaged in a heated exchange over immigration policies, highlighting the stark contrasts between their political ideologies. Booker, representing New Jersey, emphasized the need for humane immigration reform, while Cruz advocated for stricter enforcement measures.

The debate underscored the broader national divide on immigration and showcased New Jersey’s role in shaping federal policy discussions.

Coordinated Enforcement: Multiple Agencies Participate in ICE Operations Across NJ

Multiple federal and state agencies have collaborated in recent Immigration and Customs Enforcement (ICE) operations across New Jersey. These coordinated efforts reflect ongoing tensions between state policies and federal immigration enforcement strategies.

New Jersey’s stance on sanctuary policies and immigrant rights continues to be a contentious issue, influencing both local governance and national debates on immigration reform.

A Pivotal Moment for New Jersey’s Political Landscape

The 2025 gubernatorial election presents a critical juncture for New Jersey. Voters face choices that will shape the state’s economic policies, social justice initiatives, and environmental strategies. The candidates’ platforms reflect a diverse array of approaches to addressing the challenges facing the Garden State.en.wikipedia.org

As the election approaches, it is essential for residents to engage with the candidates’ proposals and consider the long-term implications of their decisions. New Jersey’s political future is at a crossroads, and the outcome of this election will set the course for the state’s development in the years to come.

A New Chapter for Atlantic City: Foya Development Launches Affordable Homeownership Project

Atlantic City is turning a bold new page with a transformative effort that aims to empower residents through the most impactful form of economic stability: homeownership. Foya Development Group, under the leadership of visionary entrepreneur Adenah Bayoh, has launched a groundbreaking affordable housing initiative in partnership with the New Jersey Department of Community Affairs. This project marks a significant step forward in bringing accessible, sustainable homeownership opportunities to local families—and it’s exactly the kind of progress Atlantic City needs.

Building More Than Homes—Building Futures

This isn’t just about new buildings; it’s about building brighter futures. For too long, homeownership has felt out of reach for many working-class residents in Atlantic City, where economic inequality and housing instability have been ongoing challenges. This new initiative will not only create affordable housing units but also offer pathways to financial empowerment, neighborhood revitalization, and community pride.

Through this project, residents will have access to homes designed with both affordability and quality in mind—homes they can truly call their own. Foya Development’s mission goes beyond bricks and mortar. It’s about creating spaces where families can thrive, build generational wealth, and take ownership of their community’s future.

A Leader with a Vision for Change

At the heart of this initiative is Adenah Bayoh, a name synonymous with innovation, empowerment, and impact. Bayoh brings a deeply personal understanding of what it means to overcome adversity and succeed. Her leadership of Foya Development Group reflects a commitment to inclusive growth, housing equity, and reimagining what urban development can look like when it prioritizes people over profit.

This Atlantic City project is part of a broader effort by Bayoh and her team to invest in underserved neighborhoods and give residents a real stake in the revitalization process.

A Turning Point for Atlantic City

As Atlantic City continues to redefine itself beyond the casino image, initiatives like this show a different side of the city—one that’s focused on resilient communities, economic diversity, and long-term opportunity. Local leaders, advocates, and residents are rallying around this project as a catalyst for change, one that could set the standard for future development across New Jersey.

The homes built through this initiative aren’t just providing shelter—they’re laying the foundation for a stronger, more inclusive Atlantic City.

What’s Next?

Environmental Advocates and Fishermen Unite to Challenge Empire Wind Project

In a bold move to protect marine life and coastal communities, a coalition of environmental groups and commercial fishermen has filed a federal lawsuit aimed at halting the Empire Wind offshore wind project. The legal action, initiated by organizations including Protect Our Coast New Jersey, Clean Ocean Action, and ACK for Whales, highlights growing concerns over the long-term ecological impact of large-scale offshore wind developments along the Atlantic coast.

What’s at Stake?

The Empire Wind project, proposed off the coast of New Jersey and New York, is one of several major offshore wind initiatives intended to accelerate the shift toward renewable energy. While many support clean energy solutions, opponents argue that these developments are moving forward without sufficient research into how they might affect ocean ecosystems, commercial fisheries, and marine mammals—particularly endangered species like the North Atlantic right whale.

The plaintiffs claim that the project has not undergone adequate environmental review and may violate federal protections, including the Marine Mammal Protection Act and the Endangered Species Act.

Voices from the Shore

Fishermen have long depended on these waters for their livelihoods, and many feel that their voices have been drowned out in the race to go green. “We’re not against clean energy,” say members of the fishing community. “But we are against reckless development that threatens the very environment it claims to save.”

Environmental advocates echo this sentiment. Their lawsuit asserts that fast-tracking projects like Empire Wind without a thorough, transparent process could lead to irreversible damage to marine life and the ocean floor.

A Crossroads for Clean Energy and Conservation

This lawsuit represents more than just a legal battle—it’s part of a larger conversation about how to balance the urgent need for renewable energy with the equally important need to preserve biodiversity and protect long-standing industries.

Supporters of the lawsuit are calling for a pause on wind development until more comprehensive studies are conducted. They believe that with smarter planning, it’s possible to transition to clean energy without sacrificing the health of our oceans or the economic well-being of coastal communities.

For those passionate about sustainability and the future of New Jersey’s natural resources, this case marks a critical moment. It’s sparking much-needed debate about how energy infrastructure should evolve while respecting both nature and those who depend on it.

The Bigger Picture

The movement to challenge the Empire Wind project is gaining attention far beyond state borders, as coastal communities up and down the Atlantic grapple with similar concerns. From whale migration routes to underwater noise pollution, the potential risks of offshore wind are now under greater scrutiny.

Explore more about this and other forward-thinking environmental issues in our Cutting Edge New Jersey section, where we dive into how innovation, activism, and policy are shaping the future of the Garden State.

Explore New Jersey will continue to follow this developing story and provide updates on the legal proceedings, environmental assessments, and community responses. Whether you’re a concerned citizen, a nature lover, or someone with deep roots in the fishing industry, this case is one to watch—because the future of our coast depends on the choices we make today.

🔥 Bring the Sizzle Home with Hibachi Vegetables

If you’ve ever gathered around a hot hibachi grill, you know it’s not just about the theatrics — it’s about the flavor. And while the steak or shrimp might get the spotlight, the vegetables are the real showstoppers. Buttery, garlicky, and perfectly seasoned, hibachi vegetables are the unsung heroes of Japanese steakhouse dining.

With Jersey Girl Cooks’ simple and satisfying Hibachi Vegetables recipe, you can recreate that same restaurant magic right at home — no flaming onion volcano required. This quick-cooking dish combines fresh zucchini, mushrooms, and onions in a buttery soy-garlic sauce that packs a savory punch.

It’s the perfect side for grilled meats, noodles, or even on its own over rice. And with just a handful of ingredients, it’s weeknight dinner gold.

Hibachi Vegetables

If you’ve ever sat around a sizzling hibachi grill, you know the vegetables are just as crave-worthy as the steak or shrimp. These hibachi vegetables are buttery, garlicky, and perfectly seasoned—bringing that Japanese steakhouse flavor straight to your own kitchen. This quick, flavorful side, is a must-make recipe.

Hibachi Vegetables topped with sesame seeds in a cast iron skillet.

Our local hibachi restaurant is always a good time. The chefs put on a show, the food never disappoints, and everyone has their favorite part—whether it’s the fried rice, the Yum-Yum sauce, or the sizzling steak and shrimp. But me? I’m all about the vegetables. They’re buttery, garlicky, and packed with umami flavor, with just the right balance of tenderness and crunch. I could honestly eat a whole plate and skip everything else.

The good news is, you don’t have to wait for a special night out to enjoy them. Hibachi vegetables are surprisingly easy to make at home and pair well with so many meals. Whether you’re serving grilled chicken, teriyaki beef, or just want a quick veggie stir-fry, this recipe is a great one to keep in your weekly rotation.

Ingredients

Ingredients needed for hibachi vegetables.
  • Olive Oil – Or use your favorite light, neutral flavored oil.
  • Garlic – Use fresh garlic for the best flavor. Mincing it finely helps it distribute throughout the dish.
  • Onion – A yellow or white onion works well. Slice it into even strips so it cooks at the same rate as the other veggies.
  • Carrots – Julienne or thinly slice for quick, even cooking. Pre-cut matchstick carrots can save time.
  • Mushrooms – White or cremini mushrooms both work. Slice them evenly so they brown nicely without getting soggy.
  • Broccoli – Cut into small, uniform florets so they cook quickly but still have a little bite.
  • Soy Sauce – Adds that classic umami flavor. Use low sodium if you’re watching salt intake, or tamari or coconut aminos for a gluten-free option.
  • Unsalted Butter – Butter gives the veggies a rich flavor. I prefer to use unsalted butter because soy sauce can be quite salty.
  • Sesame Seeds – Toasted sesame seeds add a nutty crunch. They’re optional but add a nice finishing touch.
  • Salt and Black Pepper – Season to taste at the end. Start light if your soy sauce is salty.

See recipe card below for exact quantities and instructions.

Instructions

Garlic is browned in a skillet.
  1. Step 1: Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
Vegetables are cooked in a cast iron skillet until crisp tender.
  1. Step 2: Add sliced onion and carrots, cook for 2 minutes. Then add mushrooms and broccoli. Stir-fry for another 4–5 minutes until tender but still crisp.
Soy sauce and other seasonings are added to sautéed vegetables.
  1. Step 3: Add soy sauce and butter. Stir everything well until the butter melts and coats the vegetables. Season with salt and pepper to taste.
Hibachi-style vegetables are served with a spoon.
  1. Step 4: Sprinkle veggies with sesame seeds and season with salt and pepper to taste. Serve while hot. This is great next to grilled meats and/or rice.

Hint: Slice all the vegetables to uniform sizes for even cooking.

Variations/ Substitutions

  • Add Zucchini – Zucchini is a popular hibachi veggie that cooks quickly and absorbs flavor well. Slice into half moons or strips.
  • Use Bell Peppers – Red, yellow, or orange peppers add color and sweetness to the mix.
  • Swap the Sauce – Try teriyaki or a drizzle of hoisin sauce instead of plain soy sauce for a different flavor.
  • Spice It Up – Add a pinch of red pepper flakes or a squirt of sriracha for some heat.
  • Make It a Meal – Toss in cooked chicken, shrimp, or tofu to turn it into a main dish.
  • Add Baby Corn or Snow Peas – For a more stir-fry style dish with added crunch.

🍌 Cozy Up to Banana Bread Overnight Oats

Now let’s talk breakfast. If you love the comforting flavors of banana bread but don’t have time to bake in the morning, these Banana Bread Overnight Oats are a total game changer. Creamy, naturally sweet, and full of warm cinnamon spice, they taste like dessert — but they’re built for your busiest mornings.

This no-cook, make-ahead breakfast is as practical as it is delicious. Simply mix ripe bananas with oats, milk, a touch of cinnamon, and maybe a few walnuts or chocolate chips for extra flair. Let it chill in the fridge overnight, and by morning, you’ve got a grab-and-go breakfast that feels like a treat.

Great for meal prepping and easy on the wallet, this is a healthy start to your day without sacrificing flavor or time.

  • Banana – I like to use a ripe banana with some brown spots. They have a natural sweetness and are easy to mash.
  • Old Fashioned Oats – Choose rolled oats for the best texture. Quick oats will be mushier, and steel-cut oats won’t soften enough.
  • Milk – Any milk works! Whole milk makes it creamy, while almond, oat or soy milk are great dairy-free options.
  • Pecans – Chop them for a bit of crunch in every bite. Walnuts or almonds make great swaps, or skip nuts altogether if preferred.
  • Maple Syrup – Go for pure maple syrup for the best flavor. Honey or agave syrup can be used instead.
  • Vanilla Extract – A little pure vanilla enhances the banana bread flavor.
  • Ground Cinnamon – Adds warmth and spice. A pinch of nutmeg can be a nice addition.
  • Coarse Sea Salt – Just a small amount balances the sweetness and brings out the flavors.

See recipe card for quantities.

Instructions

Ripe bananan is mashed in a bowl.
  1. Step 1: Place the banana in a small bowl and smash it well.
Milk and oats are added to a jar.
  1. Step 2: Add the milk to a mason jar and add the oats to the milk.
Nuts are scooped into a jar with other ingredients.
  1. Step 3: Add the banana, syrup, vanilla, salt, cinnamon, and chopped nuts to the jar.
Overnight oats are mixed in a mason jar.
  1. Step 4: Stir well and secure the lid on the jar. Place in the fridge to chill overnight or for at least 4 hours (I like it best overnight). Stir before eating or heat it up if you prefer.

Hint: I prefer to use wide-mouth jars. It’s easier to add the ingredients and easier to get your spoon in it to get all of the goodness!

Variations/ Substitutions

  • Add Chocolate – Stir in some mini chocolate chips for a little extra sweetness.
  • High Protein – Add a scoop of vanilla or unflavored protein powder and an extra splash of milk to keep the texture creamy.
  • Nut-Free – Skip the pecans or swap them for sunflower seeds, hemp seeds, chia seeds or shredded coconut for crunch without nuts.
  • Berries – Mix in fresh or frozen blueberries, raspberries, or chopped strawberries for a fruity twist.
  • Nut Butter – Swirl in a spoonful of peanut butter or almond butter for extra creaminess and protein.
  • Dairy-Free – Use almond, soy, oat, or coconut milk to keep it completely dairy-free.
  • Warm It Up – Heat it up in the microwave for 30-60 seconds before eating if you prefer a warm breakfast.

UFC 302 Generates Massive $26.8M Economic Impact in Newark — UFC Returns This Weekend with More Action

New Jersey just keeps proving it’s more than ready for the spotlight.

As the adrenaline-pumping world of the UFC prepares to make its third consecutive return to Newark this weekend with UFC 316: Dvalishvili vs. O’Malley 2, new data from a recent study shows just how big an impact the sport has had on the Garden State — and the numbers are impressive.

According to the latest findings, UFC 302: Makhachev vs. Poirier, which took over the Prudential Center on June 1, 2024, wasn’t just a sold-out blockbuster — it generated $26.8 million in total economic impact for the Newark metro area. That’s not just a win in the octagon — it’s a win for local businesses, jobs, and tourism across New Jersey.

Want to see more adrenaline-pumping action? Check out our Extreme Sports coverage here.

Record-Breaking Numbers at Prudential Center

UFC 302 drew a sold-out crowd of 17,800 fans, raking in $7.3 million at the gate, officially becoming the highest-grossing sporting event in Prudential Center history. The event wasn’t just popular — it brought real dollars and jobs to the region.

Here’s a breakdown of what UFC 302 delivered:

  • $14.3 million in direct spending from fans, vendors, and organizers
  • 207 local jobs supported in hospitality, transportation, and other sectors
  • $12 million in local salaries and wages paid
  • $1.1 million in state and local taxes generated from event-related purchases
  • An incredible 36.2 billion media impressions and $652.3 million in media value

Most notably, 79% of ticket sales came from outside New Jersey, with attendees from 48 states and 34 countries making the trip to Newark. That means thousands of visitors were booking hotel rooms, dining in restaurants, shopping, and experiencing all that New Jersey has to offer.

Newark: A Hub for World-Class Entertainment

New Jersey Governor Phil Murphy celebrated the event’s success, calling it a milestone that “underscores the City of Newark and Prudential Center’s status as a premier destination for world-class entertainment.”

And the momentum isn’t slowing down. This weekend’s UFC 316 is expected to draw even more fans and excitement to Newark. Headlining the event is a high-stakes rematch between bantamweight champion Merab Dvalishvili and fan favorite Sean O’Malley, alongside a thrilling co-main event featuring Julianna Peña defending her title against rising powerhouse Kayla Harrison.

The return of the UFC to New Jersey is no coincidence. According to UFC COO Lawrence Epstein, fan demand in the Garden State has been “overwhelming,” and the partnership with the Prudential Center and the City of Newark has made hosting these events a slam dunk.

“We thank Governor Murphy, the city of Newark, and the amazing team at Prudential Center for welcoming UFC with open arms,” Epstein said. “These events are unforgettable, and New Jersey has proven to be the perfect home.”

ConnectOne Bank Expands Footprint with Strategic Long Island Acquisition

ENGLEWOOD CLIFFS, NJ — In a significant move that strengthens its presence in the tri-state region, ConnectOne Bank has officially completed its acquisition of The First National Bank of Long Island, marking a pivotal moment in the bank’s growth strategy and reinforcing its standing as a leading middle-market financial institution.

The deal, originally valued at $284 million, brings the total number of ConnectOne’s locations to over 60 branches across New York, New Jersey, and Southeast Florida. With this acquisition finalized, ConnectOne now boasts approximately $14 billion in assets, along with $11 billion each in deposits and loans. These figures place the Englewood Cliffs-based institution among the top five community banks in Long Island by deposit market share—an impressive climb in one of the most competitive banking landscapes in the region.

A Bold Step Toward Regional Dominance

This acquisition is more than just a business transaction—it’s a carefully aligned strategic move. Long Island’s Nassau and Suffolk counties, home to nearly 2.9 million residents, offer a strong market characterized by high household incomes and a stable, aging population. With a median household income of $132,080, the area presents a valuable opportunity for expanding ConnectOne’s client base among affluent households and businesses alike.

By folding The First National Bank of Long Island into its operations, ConnectOne is not only gaining new customers, but also extending its footprint into an area that aligns with its mission of community-focused banking. The combined entity is operating under the ConnectOne brand, ensuring a seamless transition for legacy customers while offering enhanced capabilities and resources.

“We are pleased to conclude this complementary, financially savvy transaction, expanding the ConnectOne mission,” said Frank Sorrentino, Chairman and CEO of ConnectOne. “With greater scale, enhanced capabilities, and a shared client-first culture, we are poised to accelerate growth and strengthen franchise value.”

Leadership and Vision for the Future

As part of the agreement, ConnectOne’s board of directors has expanded to 15 members, incorporating experienced leaders from The First National Bank of Long Island. Among the new additions are Christopher Becker, appointed as Vice Chairman of ConnectOne, along with Peter Quick and Ed Haye, who will serve as independent directors. Their expertise will play a critical role in guiding the bank’s next phase of regional growth.

Shareholders of First of Long Island received 0.5175 shares of ConnectOne common stock for every share held, with cash in lieu of fractional shares, completing the shareholder transition.

For those following the evolving financial landscape in the Northeast, this merger signals a continued push toward scalable, community-oriented banking that doesn’t compromise on service quality. It’s also a notable reminder of how local banks are leveraging smart partnerships to stay competitive in an increasingly nationalized financial world.

Why This Matters for New Jersey and Beyond

With this acquisition, New Jersey-based ConnectOne solidifies its position as a serious player not just locally, but across the broader New York metropolitan area. This deal enhances access to high-growth markets, while reaffirming the bank’s commitment to personalized service and relationship-based banking—a hallmark of its ongoing strategy.

Explore New Jersey Crime Report With Tragedy, Theft & Justice in the Garden State

From a high-profile homicide in Cherry Hill to a brazen theft from one of rock’s legendary bands in Atlantic City, recent criminal cases in New Jersey reveal both the intensity and complexity of the state’s justice landscape. Here’s a closer look at two stories that have gripped communities across the state — and why they matter.

👉 Stay informed with the latest New Jersey news and crime reports.

Cherry Hill Murder Case: Suspect Held Without Bail in Death of Beloved Veterinarian

In a heartbreaking case that has shocked South Jersey, Cristian Custodio-Aquino, 25, has been denied bail and ordered held in state custody as he awaits trial for the alleged murder of Dr. Michael Anthony, a well-respected Cherry Hill veterinarian.

Judge Gwendolyn Blue ruled that Custodio-Aquino posed a significant flight risk, citing details that raise serious concerns about obstruction and evasion. According to prosecutors, after Dr. Anthony’s death, the defendant allegedly attempted to destroy evidence and fled to California, prompting a multi-state investigation that ultimately led to his capture.

The prosecution has also revealed that Custodio-Aquino was an ex-boyfriend of Dr. Anthony’s partner, adding a layer of personal complexity to what’s being investigated as a targeted act of violence.

Dr. Michael Anthony was a cherished figure in the Cherry Hill community, known for his compassionate work with animals and deep ties to local families. His tragic death has left a void not only in his profession but in the hearts of countless clients, friends, and colleagues.

Custodio-Aquino’s legal team argued for conditional release, but Judge Blue emphasized the seriousness of the charges, his attempted flight, and the potential risk to public safety as key reasons for holding him without bail.

The case continues to unfold, and as investigators dig deeper into the motive and timeline, the community waits for justice — and answers.

In Atlantic City: Musical Mayhem as Instruments Are Stolen from Rock Band Heart Before Show

Just days before a scheduled performance in Atlantic City, legendary rock band Heart fell victim to a significant theft — a collection of their musical instruments was stolen, jeopardizing their concert and rocking their crew to the core.

The theft occurred shortly before the band’s highly anticipated show in the city’s bustling entertainment district. Law enforcement sources confirmed that multiple items were taken from the band’s equipment transport, including guitars, keyboards, and other tour-critical instruments.

In a statement issued by the band’s management, the group expressed deep frustration over the incident and called on the public for help. A reward has been offered for any information that leads to the recovery of the stolen equipment.

Despite the setback, Heart managed to take the stage, albeit with borrowed gear and limited setups — a testament to their professionalism and the support of their fellow musicians.

Atlantic City authorities are actively investigating the incident, reviewing surveillance footage from surrounding venues and conducting interviews with venue staff and third-party logistics crews.

The theft raises broader concerns about security measures for touring acts, particularly in high-traffic entertainment hubs like Atlantic City. With summer concert season ramping up, both law enforcement and event promoters are expected to reassess current protocols to better safeguard traveling performers.

A State on Edge but Standing Strong

From senseless violence to opportunistic theft, these stories serve as reminders of the challenges law enforcement and communities face in keeping New Jersey safe and secure. They also reveal the resilience of those affected — families seeking justice, musicians carrying on through adversity, and communities pulling together.

As both cases progress, we’ll continue to follow developments and share updates with clarity, compassion, and accountability.

Big Moves in Business, Bold Shifts in Education – What’s Next for the Garden State?

New Jersey continues to be a state on the move—from innovative entrepreneurial ventures to intense education policy debates, the landscape is shifting fast. Whether you’re an investor, educator, parent, or just someone who cares about the future of New Jersey, there’s a lot to pay attention to right now.

Let’s break down two of the biggest stories redefining what’s next for the Garden State: a powerful new business acquisition strategy led by entrepreneur Sheldon Peters, and emerging concerns about homeschooling and academic performance that could reshape education policy in Trenton.

👉 Explore more of New Jersey’s cutting-edge developments here.

Sheldon Peters and SP Publishing, Inc. Launch Ambitious M&A Fund

New Jersey has always been fertile ground for innovation, and now it’s gaining steam in the mergers and acquisitions space. Sheldon Peters, a seasoned real estate investor, entrepreneur, and business coach, has officially launched an M&A fund under SP Publishing, Inc.—with a clear target: home service-based businesses.

This move is more than a personal milestone; it signals a rising trend among local investors to strengthen and consolidate New Jersey’s small business economy.

What’s unique about Sheldon Peters’ approach is that it doesn’t just focus on financials—it’s a vision-led acquisition model, where legacy, community presence, and operational sustainability play a big role in selecting businesses. His fund is expected to target companies in industries like HVAC, plumbing, landscaping, pest control, roofing, and other essential home services.

In a time when corporate consolidation is often met with skepticism, Peters is taking a community-first approach. The goal is not just to acquire and scale, but to preserve jobs, improve operations, and modernize family-owned service businesses that are the backbone of local economies across the state.

With access to coaching, systems upgrades, and digital transformation tools, businesses acquired by the SP Publishing M&A fund won’t just survive—they’ll thrive in a competitive marketplace.

This bold move not only strengthens New Jersey’s small business infrastructure, but it also sends a clear message: smart local investment can power long-term growth.

Education Under Pressure: Homeschooling and Falling Math Scores Put Trenton in the Hot Seat

While the private sector is making waves, New Jersey’s public education system is under the microscope—and the findings are raising eyebrows. Earlier this year, a national study from Harvard placed New Jersey 43rd out of 50 states in terms of student math score improvement, a concerning indicator for one of the wealthiest and most education-focused states in the country.

That alarming ranking has prompted renewed debates in Trenton, especially around the future of alternative education models like homeschooling. Lawmakers are reportedly eyeing tighter oversight, curriculum standards, and potential new regulations for homeschooling families in response to these statewide academic performance concerns.

Critics argue this may be a misdirected effort—pointing out that homeschooled students often perform above average in both math and reading. Supporters of increased oversight say a lack of standardized curriculum in homeschooling leaves room for educational gaps, particularly in math and STEM subjects.

Regardless of which side you’re on, one thing is clear: Trenton is preparing to take action. Whether it’s in the form of legislation, funding changes, or new testing mandates, the homeschooling community and public education leaders alike are bracing for what could be a significant policy shift.

This debate highlights a broader issue facing the state—how to modernize education while respecting diverse learning models. In an era where flexibility and remote learning are more accessible than ever, New Jersey’s education system must find a balance between structure and innovation.

Business Innovation and Education Reform: The Future Is Being Written Now

At first glance, Sheldon Peters’ M&A fund and the state’s homeschooling scrutiny might seem unrelated—but they’re connected by a deeper theme: New Jersey is undergoing a transformation.

In business, entrepreneurs are rethinking what it means to grow and scale responsibly. In education, leaders are confronting uncomfortable truths about performance and accountability. Both sectors are being challenged to modernize, adapt, and evolve with the changing needs of our communities.

That’s what makes this moment so critical—and so full of potential.

Whether you’re watching the markets or monitoring your local school board, there’s no denying that New Jersey stands at the edge of a cutting-edge shift in values, strategy, and opportunity.

👉 Stay updated on these powerful changes and more right here.

New Jersey isn’t just reacting to the challenges of today—it’s reshaping itself for the future. Visionary entrepreneurs like Sheldon Peters are creating bold new pathways in business, while policymakers wrestle with how best to prepare the next generation of students.

The question now is: Will we seize this moment to lead with purpose, or let outdated systems hold us back?

At Explore New Jersey, we’ll keep tracking the stories that matter—and the ones that will define our state for decades to come.

It’s Time to Reset Priorities and Embrace Fiscal Discipline Before It’s Too Late

As the clock ticks down toward New Jersey’s fiscal year 2026 budget deadline, a growing sense of urgency is sweeping through Trenton, Wall Street, and Main Street alike. What happens over the next month could chart the course of our state’s economic future—for better or for worse. Governor Phil Murphy and the State Legislature are now tasked with finalizing a budget that could either rein in runaway spending or deepen the cracks in an already fragile foundation.

With the eyes of employers, residents, and future investors fixed on what comes next, one thing is clear: we can no longer afford to kick the can down the road. It’s time to embrace fiscal discipline, reprioritize spending, and refocus on what truly matters to the people of New Jersey.

👉 Read more about New Jersey’s political and economic challenges.

The Warning Signs Are Flashing

New Jersey has long battled a reputation for high taxes, mounting debt, and unfunded liabilities—particularly in public pensions and benefits. While some short-term gains have been made in the wake of the COVID-19 pandemic thanks to federal aid and temporary revenue boosts, those band-aids are starting to fall off. The financial reality is setting back in.

The approaching FY2026 budget deadline forces state leaders to reckon with ballooning expenditures and increasingly limited revenue options. If bold, responsible steps aren’t taken now, New Jersey risks sliding deeper into a fiscal hole that could take years—if not decades—to climb out of.

The Need for Strategic Reprioritization

The upcoming budget decision isn’t just about numbers on a spreadsheet—it’s about priorities. Which services are truly essential? Where are we overspending? And how do we ensure every dollar spent is delivering measurable value for New Jerseyans?

This moment calls for a clear-eyed reevaluation of spending priorities. Instead of expanding government programs without long-term funding strategies, we should be:

  • Investing in infrastructure that drives economic growth.
  • Supporting small businesses and reducing regulatory hurdles that choke entrepreneurship.
  • Reforming public pension obligations to reflect sustainable, modern realities.
  • Expanding transparency in how tax dollars are allocated and spent.

Resetting our financial compass now is crucial to avoid the long-term pain that comes with unsustainable budgeting.

Economic Growth Must Be a Core Focus

A well-crafted state budget isn’t just about balancing income and expenses—it’s a blueprint for economic growth. But if we continue burdening employers and entrepreneurs with unpredictable tax hikes and bloated regulatory policies, we’ll continue to see companies—and jobs—leave New Jersey for more business-friendly states.

A disciplined budget should prioritize workforce development, tax stability, and job creation, especially in key sectors like technology, logistics, healthcare, and clean energy. These are the industries that will drive New Jersey’s competitiveness for decades to come—if we give them the tools and incentives to thrive here.

What’s at Stake for Everyday New Jerseyans

Budget decisions made in Trenton echo across every corner of New Jersey. Property tax increases, toll hikes, school funding formulas, and healthcare access are all influenced by how the state manages its resources.

Without fiscal discipline, working families face higher costs of living, limited job prospects, and deteriorating public services. Seniors worry about retirement security. Young professionals struggle with affordability and opportunities. And municipalities are forced to stretch already thin resources even further.

The bottom line: our future prosperity depends on responsible decisions today.

A Time for Leadership, Not Politics

Now is the moment for real leadership. Not political posturing. Not short-term promises. New Jersey needs elected officials who are willing to make tough calls that may not win applause in the short term but will lead to long-term stability and growth.

Governor Murphy and legislative leaders must take this opportunity to set a new standard for governance—one rooted in fiscal prudence, economic vision, and genuine accountability to the taxpayers of this state.

The alternative? Continued instability, higher taxes, and a steady erosion of New Jersey’s competitiveness on the national stage.

New Jersey’s Crossroads: A Final Thought

The FY2026 budget is more than a policy document—it’s a mirror reflecting our values, priorities, and commitment to the future. We stand at a financial and political crossroads. Do we continue with unsustainable spending and kick the problems further down the road? Or do we adopt the fiscal discipline that can unlock real opportunity for all New Jerseyans?

If we choose wisely—by embracing reforms, prioritizing efficiency, and creating an environment where people and businesses can thrive—New Jersey has every opportunity to lead the nation in innovation, prosperity, and resilience.

The time to act is now. Before it’s too late.
