The newest name on that pier is Cov, and it isn’t just occupying the old Pier 115 footprint. It’s reimagining what that footprint can be.

Cov opened its doors on July 19, and the timing wasn’t accidental. Summer on the Hudson practically demands a spot built for golden hour, and Cov arrived ready for exactly that moment. It comes from Blu Hospitality Group, the team behind Blu on the Hudson in Weehawken, one of North Jersey’s most consistently packed waterfront restaurants, and Cov carries that same pedigree straight onto a brand new stretch of riverfront.

A Room Designed to Feel Like Somewhere Else

Step inside and the entire design language pulls from the European and Mediterranean coast rather than the New Jersey shoreline most diners already know. Massive floor-to-ceiling windows flood the dining room with river light, and a sprawling deck extends directly over the water, putting guests as close to the Hudson as a restaurant can reasonably get without actually floating on it. On a clear evening, the Manhattan skyline sits right there across the water, close enough that it barely feels like a backdrop and more like part of the room itself.

Right now, Cov is running as a summer concept, a preview version of the restaurant before it settles into its permanent format later this year. That framing matters. It signals a team testing energy and flow during peak season rather than locking everything down before the space has proven itself in front of real crowds, and based on the reservation demand already piling up, that instinct is paying off.

A Menu Built Around the Table, Not the Plate

Culinary Director Juan Carlos Ortega built the food program around sharing, and the kitchen means it. Servers typically suggest four to six small plates per couple, which tells you everything about how this menu is meant to be eaten, passed around the table rather than claimed individually. A chilled raw bar anchors the seafood side, backed by sustainably sourced catches, lighter pasta dishes, and grilled specialties built for a warm night on the water.

Beverage Director Jeremy LeBlanche runs the bar program with the same theatrical instinct the space itself leans into, favoring interactive, visually striking cocktails over anything poured quietly. It’s a bar program built for a room with a view like this one, where the drink in front of you is allowed to compete for attention with the skyline.

Planning the Trip Out

Cov keeps a tighter schedule than most waterfront destinations, closed Monday and Tuesday entirely and running Wednesday, Thursday, and Sunday from three in the afternoon until ten at night. Friday and Saturday push an hour later, open until eleven, with the lounge bar opening at three and full dinner service beginning at four across the board. Given the popularity already building around the pier seating, reservations are strongly recommended rather than optional, and booking ahead through Cov’s OpenTable listing is the safer bet over walking in and hoping for a table.

Valet parking is available right at the entrance, which matters more than it sounds on a stretch of River Road where street parking disappears fast once the sun starts setting. The space handles both indoor and outdoor seating comfortably, and the layout is sizable enough to host private events, making Cov as reasonable a pick for a large celebration as it is for a quiet dinner for two.
